One-Pot Creamy Cheeseburger Gnocchi

Ingredients
- Ground beef (lean)400 g
- Potato gnocchi500 g
- Yellow onion, finely diced1 stk
- Garlic cloves, minced2 stk
- Beef broth400 ml
- Tomato paste2 tbsp
- Yellow mustard1 tsp
- Shredded cheddar cheese150 g
- Baby spinach, finely chopped50 g
- Cherry tomatoes, halved10 stk
Instructions
In a large skillet or wide pot, brown the ground beef with the diced onions over medium-high heat until the meat is no longer pink.
Stir in the garlic, tomato paste, and mustard. Cook for 1 minute until fragrant. Pour in the beef broth and bring to a gentle simmer.
Add the gnocchi directly into the pan with the broth. Cover with a lid and cook for about 3-5 minutes, or until the gnocchi are tender and have absorbed most of the liquid.
Stir in the finely chopped spinach and halved cherry tomatoes. Gradually add the shredded cheddar cheese, stirring until you have a smooth, creamy sauce coating the gnocchi.
Serve immediately in bowls. For an authentic cheeseburger feel, top with a few pickle slices or a drizzle of sugar-free ketchup if the kids prefer.
