Crispy Golden Gnocchi & Honey Sausage Bake

Ingredients
- Store-bought potato gnocchi (shelf-stable or chilled)500 g
- Mild pork or chicken sausages, sliced into rounds400 g
- Cherry tomatoes250 g
- Frozen peas150 g
- Olive oil2 tbsp
- Honey1 tbsp
- Dried oregano1 tsp
- Grated Parmesan cheese50 g
Instructions
Preheat your oven to 220°C (425°F). On a large rimmed baking sheet, toss the dry gnocchi (straight from the package), sliced sausages, and cherry tomatoes with olive oil, honey, and oregano until evenly coated.
Spread the mixture in a single layer and roast for 15-18 minutes. Shake the pan halfway through. The gnocchi should turn golden and crispy on the outside while the sausages brown.
Remove the pan briefly, scatter the frozen peas over the hot ingredients, and toss gently. Return to the oven for 2 more minutes until the peas are bright green and tender.
Sprinkle the grated Parmesan over the hot tray and serve immediately. The bursting tomatoes create a light sauce that coats the crispy gnocchi perfectly.
