Rainbow Chicken Taco Boats
A vibrant and playful twist on taco night that kids absolutely adore! These mini boats are mess-free for small hands and can be customized with colorful veggies, making it the ultimate 30-minute winner for a busy week 26.
Ingredients
- Chicken breast, minced500 g
- Mild taco seasoning1 packet
- Mini tortilla boats12 pcs
- Sweet corn150 g
- Cherry tomatoes, halved200 g
- Cucumber, diced0.5 stk
- Mild cheddar cheese, shredded100 g
- Sour cream4 tbsp
- Fresh lime1 stk
Instructions
Heat a large pan over medium heat with a little oil. Brown the minced chicken until fully cooked. Stir in the taco seasoning and a splash of water, letting it simmer for 3-4 minutes until the sauce thickens.
While the chicken cooks, chop the tomatoes and cucumber into small, kid-friendly pieces. Place the corn, tomatoes, and cucumber in small separate bowls to create a 'rainbow' toppings station.
Place the mini tortilla boats on a baking sheet and warm them in the oven at 175°C for about 3-5 minutes until slightly crisp but still soft.
Fill each boat with a spoonful of chicken, then let the kids choose their favorite toppings from the rainbow station. Finish with a dollop of sour cream and a tiny squeeze of lime.
