Instructions

Preheat the oven to 225°C fan. Cut the potatoes into even wedges, toss them with 2 tbsp olive oil, salt, and pepper, and spread them over a baking sheet lined with baking paper. Roast for 20–25 minutes until golden and crispy.
- 2
Finely chop the parsley and garlic. Mix together in a small bowl with the red wine vinegar, 3 tbsp olive oil, oregano, chili flakes, salt, and pepper. Let the dressing rest on the counter to allow the flavours to meld.
- 3
Heat a pan with a little oil over medium heat. Fry the onion slices slowly, stirring occasionally, for about 10 minutes until soft, sweet, and golden brown. Set aside.
- 4
Fry the bacon slices until crispy in a hot pan and drain on paper towels. Then fry the eggs sunny-side up with runny yolks in the same pan or with a little butter.
- 5
Season the thin steak slices with salt and pepper. Fry them quickly over high heat for 1–2 minutes on each side. Place a slice of cheese over each steak for the final minute and cover with a lid so the cheese melts perfectly.
- 6
Distribute the crispy potato wedges onto the plates. Place the cheese-topped steaks alongside, topped with caramelised onion, crispy bacon, and fried eggs. Drizzle the fresh chimichurri all over and serve immediately.
