Instructions

  1. 1

Mix together the minced meat, bacon pieces, chopped hard-boiled eggs, two-thirds of the parsley, one clove of garlic, breadcrumbs, a pinch of salt, and pepper in a bowl until you have a uniform stuffing.

  2. 2

Lay the thin beef slices out on a cutting board. Season lightly with salt and pepper. Distribute the filling mixture in the center of each slice, roll tightly, and secure with toothpicks or kitchen twine.

  3. 3

Heat olive oil in a wide pot over medium-high heat. Brown the beef roulades nicely on all sides for about 4–5 minutes. Remove them and set aside on a plate.

  4. 4

In the same pot, sauté the chopped onion, carrot, and the remaining garlic until soft. Stir in the tomato paste and cook for one minute before deglazing with red wine. Add the chopped tomatoes and bring to a boil.

  5. 5

Return the beef roulades to the pot, reduce the heat, and let everything simmer covered for about 35 minutes until the meat is tender and the flavors have melded. Add the peas during the last 5 minutes.
