  • Beef sirloin or minute steaks600 g
  • Fine breadcrumbs150 g
  • White rice300 g
  • Firm potatoes, boiled and sliced400 g

  • Carrot, grated1 stk
  • Fresh parsley, chopped0.5 bunch

Instructions

  1. 1

Cook the white rice according to package instructions. Meanwhile, boil the potatoes in salted water until tender, then drain and cut into 1 cm thick rounds.

  2. 2

Place the beef steaks between two sheets of plastic wrap or parchment paper. Use a meat mallet or heavy pan to pound them until they are very thin, almost translucent.

  3. 3

Season the thin meat with salt and pepper. Press the steaks firmly into the breadcrumbs, ensuring both sides are heavily coated and the breadcrumbs are worked into the meat fibers.

In a bowl, combine the diced tomatoes, red onion, cooked beetroot, grated carrot, and parsley. Season with a splash of oil, vinegar, salt, and pepper to create a refreshing garnish.

  5. 5

In a large skillet, fry the potato rounds in oil until golden and crispy. Remove and keep warm. In the same pan, fry the breaded steaks for 2 minutes per side until dark golden. Finally, fry the eggs sunny-side up.

  6. 6

Plate a generous portion of rice, top with the crispy potatoes, then place the steak on top. Crown the steak with the fried egg and finish with a large heap of the colorful beet salsa.
