One-Pan Cheesy Taco Shells
This week’s recommendation is a clever fusion of two family favorites: creamy mac & cheese and zesty tacos. It’s a one-pan wonder designed for busy parents, featuring a velvety cheese sauce and mild spices that make it a guaranteed hit for kids and adults alike.
Ingredients
- Ground beef400 g
- Small pasta shells300 g
- Mild taco seasoning2 tbsp
- Beef broth700 ml
- Shredded cheddar cheese150 g
- Cream cheese2 tbsp
- Sweet corn (canned)150 g
- Fresh spinach, finely chopped50 g
- Cherry tomatoes, halved100 g
Instructions
Heat a large skillet over medium-high heat and brown the ground beef until cooked through, draining any excess fat if necessary.
Add the dry pasta shells and taco seasoning to the pan, then pour in the beef broth. Bring to a boil, then reduce heat and simmer for 10-12 minutes until the pasta is tender and most of the liquid is absorbed.
Stir in the cream cheese, shredded cheddar, corn, and finely chopped spinach. Stir continuously until the cheese is melted and the sauce is thick and creamy.
Top the dish with halved cherry tomatoes for a fresh crunch and serve directly from the pan to minimize cleanup.
