Ingredients
- Masa Harina (corn flour)3 cups
- Warm Water2.5 cups
- Shredded Mozzarella or Quesillo250 g
- Refried Black Beans1 cup
- Green Cabbage, shredded0.5 pcs
- Carrot, grated1 pcs
- Apple Cider Vinegar0.5 cups
- Dried Oregano1 tsp
- Salt1 tsp
Instructions
Combine the shredded cabbage, grated carrots, vinegar, and oregano in a bowl. Massage the vegetables slightly with your hands to soften them, then set aside to marinate and develop flavor.
In a large mixing bowl, combine the masa harina, a pinch of salt, and warm water. Knead the mixture until a smooth, moist dough forms; it should feel like playdough and not stick to your hands.
Divide the dough into 8 balls. Use your thumb to create a deep indentation in each ball, fill the center with a spoonful of cheese and beans, and then carefully pinch the dough back over the top to seal.
Lightly oil your hands and gently pat the filled balls into flat discs about 1 cm thick. Cook them on a preheated medium-high skillet for 4-5 minutes per side until golden brown spots appear and the cheese begins to ooze slightly.
Serve the pupusas while hot and crispy. Top each one with a generous heap of the tangy curtido slaw to provide a fresh, crunchy contrast to the warm, cheesy interior.
