Aromatic Iraqi Celebration Biryani

Ingredients

  • Basmati rice2 cups
  • Chicken thighs, cut into bite-sized pieces600 g
  • Potatoes, peeled and cubed2 stk
  • Frozen peas1 cup
  • Golden raisins0.5 cup
  • Slivered almonds0.25 cup
  • Biryani spice mix (cardamom, cinnamon, cloves, nutmeg)2 tbsp
  • Chicken broth3.5 cups
  • Large onion, finely chopped1 stk
  • Vegetable oil for frying

Heat oil in a large pot and sauté the chopped onions until golden. Add the chicken pieces and biryani spices, cooking until the chicken is browned on all sides and the spices are fragrant.

In a separate frying pan, cook the cubed potatoes in oil until they are crispy and golden brown. Drain them on a paper towel and set aside to maintain their texture.

Add the rinsed basmati rice to the pot with the chicken. Stir well to coat the rice in the spiced oil, then pour in the chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes.

Once the rice is tender, gently fold in the fried potatoes, frozen peas, and raisins. Cover the pot again and let it steam on the lowest heat setting for another 5 minutes to allow the flavors to meld.

Toast the slivered almonds in a dry pan over medium heat until they turn golden brown. Fluff the biryani with a fork, transfer to a large serving platter, and garnish generously with the toasted almonds.
