Aromatic South African Bobotie with Golden Custard

Ingredients
- Ground beef800 g
- Onion, finely chopped2 pcs
- Garlic cloves, minced3 pcs
- Fresh ginger, grated1 tbsp
- Mild curry powder2 tbsp
- Turmeric powder1 tsp
- White bread slices2 pcs
- Milk350 ml
- Large eggs3 pcs
- Mango or apricot chutney3 tbsp
- Raisins50 g
- Bay leaves4 pcs
- Turmeric rice for serving4 portions
Instructions
Preheat your oven to 180°C. Sauté the onions, garlic, and ginger in a large pan until soft. Add the ground beef and brown it thoroughly, breaking it up with a spatula as it cooks.
Soak the bread slices in 50ml of the milk, then squeeze out the excess and mash the bread into the meat. Stir in the curry powder, turmeric, raisins, and chutney. Season with salt and pepper to taste.
Transfer the meat mixture into a greased baking dish and smooth the top. Whisk the remaining milk together with the eggs and a pinch of salt, then carefully pour this custard mixture over the meat.
Tuck the bay leaves into the custard topping. Bake for 25-30 minutes until the custard is set and lightly browned. Serve hot with yellow turmeric rice.
