Sunset Pineapple Chicken Skewers
These colorful skewers combine juicy chicken with sweet caramelized pineapple, making them an instant hit with the kids. Perfectly balanced for a busy weeknight, this meal is fun to eat and takes less than 30 minutes from start to finish.
Ingredients
- Chicken breast600 g
- Fresh pineapple0.5 stk
- Red bell pepper1 stk
- Soy sauce3 tbsp
- Honey2 tbsp
- Garlic clove1 stk
- Jasmine rice250 g
- Coconut milk200 ml
Instructions
Rinse the jasmine rice and place it in a pot with the coconut milk, a pinch of salt, and 150ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until fluffy.
Cut the chicken breast, fresh pineapple, and bell pepper into bite-sized chunks. Thread them onto wooden skewers, alternating chicken, pineapple, and pepper until all ingredients are used.
In a small bowl, whisk together the soy sauce, honey, and one minced garlic clove to create a sweet and savory glaze.
Heat a large non-stick pan with a tablespoon of oil over medium-high heat. Cook the skewers for 4-5 minutes per side. During the last few minutes, brush the glaze over the skewers generously until the chicken is cooked through and the pineapple is slightly charred.
