Ingredients
- Salmon fillets4 pcs
- White miso paste2 tbsp
- Honey1 tbsp
- Soy sauce1 tbsp
- Rice vinegar1 tbsp
- Soba noodles250 g
- Grated fresh ginger1 tsp
- Sesame oil1 tbsp
- Shelled edamame beans100 g
- Spring onions, sliced2 pcs
- Toasted sesame seeds1 tsp
Instructions
In a small bowl, whisk together the white miso paste, honey, soy sauce, and rice vinegar until smooth.
Brush the salmon fillets generously with the miso glaze. Heat a non-stick pan over medium heat and cook the salmon for 3-4 minutes per side until the glaze is caramelized and the fish is just cooked through.
Boil the soba noodles in lightly salted water for about 4-5 minutes. Drain and immediately toss with sesame oil and grated ginger to prevent sticking and add flavor.
Divide the ginger noodles into four bowls. Top each with a miso-glazed salmon fillet, steamed edamame beans, and a sprinkle of spring onions and toasted sesame seeds.
