Charred Peach & Halloumi Tacos with Miso-Lime Slaw

Ingredients
- Ripe peaches3 pcs
- Halloumi cheese400 g
- Corn tortillas12 pcs
- Red cabbage, shredded0.5 pcs
- White miso paste1 tbsp
- Lime juice2 tbsp
- Honey1 tsp
- Fresh cilantro1 bunch
- Pickled red onions100 g
- Olive oil2 tbsp
- Red chili flakes0.5 tsp
Instructions
Whisk together the miso paste, lime juice, honey, and 1 tablespoon of olive oil in a large bowl. Add the shredded red cabbage and toss well to coat. Let it marinate while you prepare the rest.
Slice the peaches into thick wedges. Lightly brush with olive oil and sear them in a hot grill pan or skillet for 2 minutes per side until charred and slightly softened.
Slice the halloumi into 1cm thick strips. Fry them in a dry pan over medium-high heat until they are golden brown and crispy on both sides.
Briefly heat the corn tortillas in a dry skillet for about 30 seconds per side until they are soft and pliable.
Fill each tortilla with a generous portion of miso slaw, then top with halloumi strips and charred peach wedges. Garnish with pickled onions, fresh cilantro, and a pinch of chili flakes.
