Summer Ember Halloumi & Watermelon Tacos

Ingredients
- Halloumi cheese400 g
- Seedless watermelon (sliced into strips)500 g
- Small corn tortillas12 pcs
- Fresh cilantro1 bunch
- Limes2 pcs
- Pickled red onions100 g
- Ripe avocados2 pcs
- Fresh jalapeño1 pc
- Olive oil2 tbsp
- Chili flakes1 tsp
Instructions
Slice the halloumi and watermelon into uniform 1-inch thick strips. Pit and mash the avocados in a bowl with a splash of lime juice and a pinch of salt.
Finely mince the cilantro and jalapeño. Combine them in a small bowl with lime zest, lime juice, olive oil, and chili flakes to create a zesty dressing.
Heat a grill pan or outdoor grill over high heat. Sear the halloumi strips and watermelon slices for about 2 minutes per side until distinct grill marks appear and the halloumi starts to soften.
Briefly toast the corn tortillas. Spread a layer of mashed avocado on each, then top with a piece of grilled halloumi and a piece of grilled watermelon. Garnish with pickled onions and a generous drizzle of the cilantro gremolata.
