Ingredients
- Halloumi cheese500 g
- Panko breadcrumbs100 g
- All-purpose flour50 g
- Large eggs2 pcs
- Smoked paprika1 tsp
- Harissa paste2 tbsp
- Runny honey2 tbsp
- Greek yogurt150 ml
- Fresh mint leaves1 handful
- Lemon0.5 pcs
- Vegetable oil200 ml
Instructions
Pat the halloumi dry with paper towels and cut into thick batons (fries). In a small bowl, whisk the eggs. Put flour and panko breadcrumbs into two separate shallow dishes, mixing the smoked paprika into the panko.
Dredge each halloumi baton in flour, dip in the whisked egg, and then roll in the panko mixture until evenly coated. Press firmly to ensure the crust sticks.
In a small ramekin, mix the harissa and honey together for the glaze. In another bowl, combine the Greek yogurt, chopped mint, and a squeeze of lemon juice.
Heat oil in a large skillet over medium-high heat. Fry the halloumi in batches for 2-3 minutes, turning occasionally, until they are golden brown and crispy on all sides.
Arrange the crispy fries on a large platter. Drizzle the spicy harissa-honey over them and serve the minted yogurt on the side for dipping. Garnish with extra mint leaves.
