Honey-Lime Grilled Halloumi & Peach Skewers
Celebrate the height of summer with this vibrant fusion of salty halloumi and caramelized peaches drizzled in a spicy honey-lime glaze. It is an exciting, texture-rich dinner that elevates a standard grill night into a gourmet experience, perfectly capturing the essence of Week 27.
Ingredients
- Halloumi cheese500 g
- Fresh peaches, firm but ripe4 stk
- Red onion1 stk
- Honey3 tbsp
- Fresh lime juice2 tbsp
- Red chili flakes1 tsp
- Quinoa250 g
- Fresh mint leaves1 handful
- Extra virgin olive oil2 tbsp
- Cucumber0.5 stk
Instructions
Rinse the quinoa and boil it according to package instructions. Once cooked, fluff with a fork and mix in chopped mint, diced cucumber, and a splash of olive oil and lime juice.
In a small bowl, combine the honey, lime juice, and chili flakes. Stir well until the honey is fully incorporated into the citrus juice.
Cut the halloumi, peaches, and red onion into uniform 3cm chunks. Thread them alternately onto wooden or metal skewers.
Heat a grill pan or outdoor grill to medium-high heat. Brush the skewers with a little olive oil and grill for 2-3 minutes on each side until the halloumi is golden and the peaches are slightly charred. During the last minute of cooking, generously brush the honey-lime glaze over the skewers.
Serve two skewers per person on a bed of the refreshing minty quinoa. Drizzle any remaining glaze over the top before serving.
