Grilled Halloumi & Charred Peach Tacos
Celebrate Week 27 with a vibrant fusion of salty halloumi and sun-ripened peaches. This unique vegetarian dinner brings a smoky, sweet, and spicy profile to your table, making it the perfect adventurous meal for a warm summer evening.
Ingredients
- Halloumi cheese400 g
- Fresh peaches3 pcs
- Small corn or flour tortillas12 pcs
- Red cabbage, finely shredded0.25 head
- Limes2 pcs
- Sour cream or Greek yogurt150 ml
- Sriracha sauce1 tbsp
- Honey1 tbsp
- Olive oil2 tbsp
- Fresh cilantro1 handful
Instructions
In a small bowl, whisk together the sour cream, the juice of one lime, and the sriracha sauce. Set aside in the refrigerator to let the flavors meld while you prepare the rest.
Slice the halloumi into 1cm thick strips. Cut the peaches into thick wedges, discarding the pits. Lightly toss the peach wedges in a mix of olive oil and honey.
Heat a grill pan or outdoor grill over medium-high heat. Grill the halloumi slices for 2 minutes per side until charred and softened. Grill the peach wedges for 1-2 minutes per side until they show distinct grill marks and become slightly caramelized.
Briefly warm the tortillas. Top each with a handful of shredded red cabbage, followed by the grilled halloumi and charred peaches. Drizzle generously with the spicy lime crema and garnish with fresh cilantro and a squeeze of lime.
