Spiced Lamb & Grilled Peach Summer Tabbouleh

Ingredients
- Ground lamb500 g
- Bulgur wheat200 g
- Fresh peaches3 pcs
- Feta cheese200 g
- Greek yogurt100 g
- Fresh mint1 bunch
- Fresh parsley1 bunch
- Cucumber1 pc
- Cherry tomatoes200 g
- Lemon1 pc
- Ground cumin1 tsp
- Ground cinnamon0.5 tsp
- Honey1 tbsp
- Olive oil2 tbsp
Instructions
Place the bulgur in a bowl and cover with boiling water. Let it sit for 10-12 minutes until tender, then drain any excess water and fluff with a fork.
In a food processor or blender, combine the feta cheese, Greek yogurt, and a squeeze of lemon juice. Blend until completely smooth and creamy.
Slice the peaches into thick wedges. Drizzle with a little olive oil and honey, then sear in a hot grill pan for 2 minutes per side until charred and softened.
In a large skillet, brown the ground lamb over medium-high heat. Add cumin, cinnamon, salt, and pepper, cooking until the meat is crispy and fully browned.
Finely chop the mint, parsley, cucumber, and tomatoes. Mix these into the fluffed bulgur with olive oil and the remaining lemon juice.
Spread a generous dollop of whipped feta on each plate. Top with the fresh tabbouleh, the spiced lamb, and finally the grilled peach wedges.
