Miso-Honey Glazed Salmon with Grilled Peach & Halloumi Salad
Celebrate the peak of summer with this bold fusion of umami and sweetness. This recipe combines tender miso-glazed salmon with the smokiness of grilled peaches and salty halloumi for a truly unique and vibrant dinner experience.
Ingredients
- Salmon fillets4 pcs
- White miso paste2 tbsp
- Honey1 tbsp
- Soy sauce1 tbsp
- Grated ginger1 tsp
- Fresh peaches3 pcs
- Halloumi cheese250 g
- Baby spinach150 g
- Red onion0.5 pcs
- Olive oil2 tbsp
- Lime juice1 tbsp
Instructions
In a small bowl, whisk together the miso paste, honey, soy sauce, and grated ginger until smooth. Set aside half for drizzling later.
Pat the salmon fillets dry and brush the miso mixture over the tops. Let them marinate at room temperature for 10-15 minutes while you prepare the salad.
Slice the peaches into wedges and the halloumi into 1cm thick slices. Grill on a hot griddle pan or BBQ for 2 minutes per side until charred and the halloumi is softened.
Heat a non-stick pan over medium heat with a little oil. Place the salmon skin-side down and cook for 4 minutes. Flip and cook for another 2-3 minutes until the glaze is caramelized and the salmon is cooked through.
Toss the baby spinach and thinly sliced red onion with olive oil and lime juice. Plate the salad, top with the grilled peaches, halloumi, and salmon. Drizzle with the remaining glaze and serve immediately.
