Golden Curried Lentil & Cabbage Skillet

Ingredients
- Dried red lentils250 g
- Green cabbage, shredded0.5 head
- Onion, finely diced1 unit
- Garlic cloves, minced3 unit
- Turmeric powder1 tsp
- Curry powder1 tbsp
- Vegetable broth700 ml
- Lemon juice0.5 unit
- Vegetable oil2 tbsp
- Salt and black pepper1 to taste
Instructions
Heat the oil in a large skillet or pot over medium heat. Add the onion and garlic, sautéing for about 5 minutes until soft and translucent.
Stir in the turmeric and curry powder for 1 minute until fragrant. Add the shredded cabbage and toss well to ensure it is evenly coated in the golden spice mix.
Add the rinsed red lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, stirring occasionally, until the lentils are tender and the liquid is mostly absorbed.
Remove from heat and stir in the fresh lemon juice to brighten the flavors. Season with salt and pepper to taste, and serve warm.
