Miso-Honey Glazed Salmon with Sesame Soba Salad

Ingredients
- Salmon fillets4 pcs
- White miso paste2 tbsp
- Honey1 tbsp
- Soy sauce1 tbsp
- Rice vinegar1 tbsp
- Soba noodles300 g
- Edamame beans, shelled150 g
- Red bell pepper1 pc
- Spring onions2 pcs
- Sesame oil1 tbsp
- Sesame seeds1 tsp
Instructions
In a small bowl, whisk together the white miso paste, honey, soy sauce, and rice vinegar until you have a smooth, consistent glaze.
Place the salmon fillets on a lined baking sheet. Generously brush each fillet with the miso-honey mixture. Bake in a preheated oven at 200°C (400°F) for 12-15 minutes until the glaze is caramelized and the salmon is cooked through.
Bring a pot of water to a boil and cook the soba noodles according to the package instructions (usually 4-5 minutes). Drain and immediately rinse under cold water to stop the cooking process.
In a large bowl, combine the cold soba noodles, edamame, thinly sliced red bell pepper, and sliced spring onions. Drizzle with sesame oil and toss well to coat.
Divide the noodle salad among four plates. Place a glazed salmon fillet on top of each portion and garnish with toasted sesame seeds.
