Midnight Summer Lamb Sliders with Whipped Feta & Pomegranate

Ingredients
- Ground lamb500 g
- Sumac1 tbsp
- Garlic cloves, minced2 pcs
- Fresh mint, chopped0.5 pot
- Feta cheese200 g
- Greek yogurt100 g
- Lemon juice1 tbsp
- Mini brioche buns8 pcs
- Pomegranate seeds50 g
- Arugula1 handful
Instructions
In a large bowl, combine the ground lamb, sumac, minced garlic, chopped mint, salt, and pepper. Mix well and form into 8 small, thick patties suitable for sliders.
Place the feta cheese, Greek yogurt, and lemon juice in a food processor or blender. Pulse until the mixture is completely smooth and airy.
Heat a grill pan or cast-iron skillet over medium-high heat. Cook the lamb patties for about 3-4 minutes per side until beautifully charred and cooked to your preferred level of doneness.
Slice the mini brioche buns in half and lightly toast them on the grill or in a pan until golden brown and slightly crisp.
Spread a generous layer of whipped feta on the bottom of each bun. Add a few leaves of arugula, a lamb patty, and top with a sprinkle of fresh pomegranate seeds before closing with the top bun.
