Ingredients
- Salmon fillets4 pieces
- White miso paste2 tbsp
- Honey1 tbsp
- Grated fresh ginger1 tbsp
- Soy sauce1 tbsp
- Fresh lime juice2 tbsp
- Ripe mango, diced1 large
- Avocado, diced1 large
- Red onion, finely chopped0.25 cup
- Fresh cilantro, chopped0.5 cup
Instructions
In a small bowl, whisk together the miso paste, honey, grated ginger, soy sauce, and half of the lime juice until the mixture is smooth and combined.
Brush the salmon fillets generously with the miso-ginger glaze on all sides and let them sit at room temperature for about 10 minutes.
In a separate bowl, gently combine the diced mango, avocado, red onion, and cilantro. Add the remaining lime juice and a pinch of salt, then set aside.
Heat a non-stick skillet over medium-high heat with a splash of oil. Cook the salmon for 4-5 minutes per side until the glaze is beautifully caramelized and the fish is tender.
Place the cooked salmon on plates and top each fillet with a generous heap of the fresh mango salsa. Serve immediately, ideally with a side of jasmine or coconut rice.
