Grilled Halloumi & Charred Watermelon Tacos
Celebrate Week 24 with a vibrant fusion of salty grilled halloumi and sweet, smoky charred watermelon. This refreshing yet hearty dinner brings an unexpected and exciting twist to your traditional taco night, making it the perfect summer highlight.
Ingredients
- Halloumi cheese400 g
- Fresh watermelon, cubed500 g
- Small corn tortillas12 pcs
- Fresh cilantro1 bunch
- Limes2 pcs
- Red chili, finely chopped1 pc
- Honey1 tbsp
- Greek yogurt150 g
- Pickled red onions100 g
Instructions
In a bowl, toss the watermelon cubes with honey, half of the chopped chili, and a squeeze of lime juice. Let it sit for 10 minutes to develop the flavors.
Slice the halloumi into 1cm thick strips. Grill over medium-high heat for 2-3 minutes per side until golden brown grill marks appear and the cheese is soft.
Add the marinated watermelon cubes to a very hot grill pan for just 60 seconds. You want a quick sear to get smoky marks while keeping the center cool and crisp.
Warm the corn tortillas in a dry pan or directly over a gas flame for a few seconds until they are pliable and slightly charred.
Layer the grilled halloumi and charred watermelon into the tortillas. Top with a dollop of Greek yogurt, pickled red onions, fresh cilantro, and the remaining chili. Serve immediately with lime wedges.
