- Soy sauce1 tbsp
- Honey1 tbsp
- Small corn tortillas8 pcs
- Mango1 pc
- Avocado1 pc
- Red onion0.5 pc
- Fresh cilantro0.5 cup
- Lime juice2 tbsp
Instructions
In a small bowl, whisk together the gochujang paste, soy sauce, and honey until smooth.
Coat the salmon fillets evenly with the glaze. Heat a skillet over medium-high heat with a splash of oil and cook the salmon for 3 to 4 minutes on each side until caramelized and flaky.
While the salmon cooks, combine the diced mango, avocado, red onion, cilantro, and lime juice in a bowl. Toss gently and season with a pinch of salt.
Lightly toast the corn tortillas in a dry skillet over medium heat, or microwave them for a few seconds until warm and pliable.
Flake the cooked salmon with a fork and distribute it among the warm tortillas. Top generously with the fresh mango-avocado salsa and serve immediately.
