10-Minute Smoked Salmon & Asparagus Gnocchi

Ingredients

  • Fresh gnocchi800 g
  • Fresh asparagus (chopped)250 g
  • Smoked salmon (sliced into ribbons)200 g
  • Crème fraîche200 ml
  • Lemon (zest and juice)1 pc
  • Fresh dill (chopped)15 g
  • Garlic (minced)1 clove
  • Olive oil1 tbsp

Instructions

Bring a large pot of generously salted water to a rolling boil over high heat.

Drop the fresh gnocchi and chopped asparagus into the boiling water. Cook for 2 to 3 minutes, or just until the gnocchi float to the surface, then drain well.

In the same warm pot (removed from the heat), whisk together the crème fraîche, minced garlic, lemon zest, lemon juice, and a drizzle of olive oil.

Gently fold the drained gnocchi, asparagus, smoked salmon ribbons, and fresh dill into the sauce. Season with fresh black pepper and serve immediately.
