Harissa Honey Glazed Salmon

- Honey2 tbsp
- Olive oil2 tbsp
- Garlic cloves2 pcs
- Couscous1 cup
- Vegetable broth1.5 cups
- Shelled pistachios0.5 cup
- Fresh mint0.25 cup
- Lemon1 pc
Instructions
Preheat your oven to 400°F (200°C). In a small bowl, whisk together the harissa paste, honey, minced garlic, and one tablespoon of olive oil to create a smooth glaze.
Place the salmon fillets on a baking sheet lined with parchment paper. Brush the sweet and spicy harissa glaze generously over the top of each fillet.
Bake in the preheated oven for 12 to 15 minutes, or until the salmon flakes easily with a fork and the glaze has caramelized beautifully.
While the salmon is baking, bring the vegetable broth to a boil in a medium saucepan. Stir in the couscous, cover with a lid, and remove from the heat. Let it sit undisturbed for 5 minutes.
Fluff the cooked couscous with a fork. Stir in the roughly chopped pistachios, finely chopped fresh mint, and the remaining tablespoon of olive oil.
Divide the vibrant pistachio couscous among four plates and gently place a glazed salmon fillet on top of each. Serve immediately with fresh lemon wedges on the side.
