Ingredients
- Chicken breasts4 pcs
- Za'atar seasoning3 tbsp
- Olive oil4 tbsp
- Garlic cloves3 pcs
- Pomegranate seeds1 cup
- Fresh mint0.5 cup
- Red onion0.5 cup
- Lemon juice2 tbsp
- Honey1 tbsp
- Salt and black pepper1 pinch
Instructions
In a bowl, mix the za'atar seasoning, minced garlic, two tablespoons of olive oil, salt, and pepper. Coat the chicken breasts evenly with the mixture and let them rest for 10 minutes.
While the chicken is resting, combine the pomegranate seeds, chopped fresh mint, finely diced red onion, lemon juice, and honey in a small bowl. Stir well and set aside to let the flavors meld.
Heat the remaining two tablespoons of olive oil in a large skillet over medium-high heat. Cook the chicken breasts for 6 to 8 minutes on each side until golden brown and cooked thoroughly.
Remove the chicken from the skillet and let it rest on a clean cutting board for 5 minutes before slicing it into thick, juicy strips.
Arrange the sliced chicken on a serving platter and generously spoon the vibrant pomegranate relish over the top. Serve immediately with a side of warm couscous or freshly baked flatbread.
