Ingredients

  • Salmon fillets, skinless4 pcs (approx. 150g each)
  • Olive oil2 tbsp
  • Garlic, minced3 cloves
  • Sun-dried tomatoes in oil, drained and chopped0.5 cup
  • Heavy cream1 cup
  • Vegetable or chicken broth0.5 cup
  • Fresh spinach3 cups
  • Grated Parmesan cheese0.5 cup
  • Salt and freshly ground black pepper1 to taste

Pat the salmon fillets dry and season generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Place the salmon in the hot pan and cook for 3-4 minutes per side, until golden brown and cooked through. Remove the salmon from the skillet and set aside.

In the same skillet, reduce the heat to medium. Add the minced garlic and cook for about 30 seconds until fragrant. Stir in the chopped sun-dried tomatoes, heavy cream, and broth. Bring to a simmer and let it cook for 2 minutes, stirring occasionally.

Stir the grated Parmesan cheese into the sauce until it melts and the sauce thickens slightly. Add the fresh spinach and stir until it has just wilted, which should take about 1-2 minutes.

Return the seared salmon fillets to the skillet, nestling them into the sauce. Spoon some of the creamy sauce over the fillets. Serve immediately, perhaps with quick-cook pasta, rice, or crusty bread to soak up the delicious sauce.
