15-Minute Spicy Chorizo & Lemon Gnocchi

Ingredients
- Fresh Gnocchi800 g
- Cooking Chorizo, sliced200 g
- Garlic2 cloves
- Lemon1 pc
- Fresh Parsley, chopped1 handful
- Olive Oil1 tbsp
- Salt and Pepper0 to taste
- Parmesan cheese, for serving (optional)0 to taste
Instructions
Start by putting a large pot of salted water on to boil for the gnocchi.
While the water heats up, finely chop the garlic, slice the chorizo, and roughly chop the parsley. Zest the entire lemon, then cut it in half.
Heat the olive oil in a large frying pan over medium-high heat. Add the sliced chorizo and fry for 3-4 minutes until crispy and it has released its flavorful oils.
Add the chopped garlic to the pan with the chorizo and fry for another minute until fragrant.
Once the water is boiling, add the gnocchi and cook according to package instructions (usually 2-3 minutes, until they float to the surface).
Use a slotted spoon to transfer the cooked gnocchi directly into the frying pan with the chorizo. Add a splash of the gnocchi cooking water to help create a light sauce.
Turn off the heat. Stir in the chopped parsley, lemon zest, and the juice of half the lemon. Toss everything together well.
Season with salt and pepper to taste. Serve immediately, with a sprinkle of Parmesan cheese if desired.
