Crispy Sheet Pan Sausage Gnocchi

  • Store-bought potato gnocchi500 g
  • Mild sausages (sliced)400 g
  • Cherry tomatoes250 g
  • Sweet corn150 g
  • Olive oil2 tbsp
  • Grated Parmesan cheese50 g

Preheat your oven to 220°C (425°F) and line a large baking sheet with parchment paper.

Place the uncooked gnocchi, sliced sausages, cherry tomatoes, and sweet corn directly onto the baking sheet. Drizzle with olive oil and toss well until everything is evenly coated.

Spread the mixture into a single, even layer. Bake for 18-20 minutes, until the gnocchi are crispy on the outside and the cherry tomatoes begin to burst.

Remove the sheet pan from the oven. Immediately sprinkle with grated Parmesan cheese and serve warm. Perfect for tiny hands and hungry tummies!
