  • Dry couscous1.5 cups
  • Hot vegetable broth1.5 cups
  • Halloumi cheese400 g
  • Cherry tomatoes250 g
  • Fresh mint leaves1 handful
  • Lemon1 pcs
  • Olive oil2 tbsp
  • Pine nuts50 g

Place the dry couscous in a large heatproof bowl. Pour the boiling hot vegetable broth over it, cover tightly with a plate or lid, and let it steep undisturbed for 5 minutes.

Slice the halloumi cheese into thick pieces. Heat the olive oil in a large skillet over medium-high heat and pan-fry the cheese for about 2 minutes on each side until deeply golden and crispy.

While the cheese cooks, halve the cherry tomatoes and roughly chop the fresh mint. Remove the cover from the couscous and fluff it gently with a fork to separate the grains.

Stir the tomatoes, mint, pine nuts, and the freshly squeezed juice of the lemon into the warm couscous. Divide the mixture into four shallow bowls, top with the warm halloumi slices, and serve immediately!
