Harissa Honey Glazed Salmon

- Pearl couscous1.5 cups
- Vegetable broth2 cups
- Shelled pistachios0.5 cups

In a small bowl, whisk together the harissa paste, honey, olive oil, and the juice from half of the lemon until perfectly smooth.
Place the salmon fillets on a baking sheet lined with parchment paper. Generously brush the harissa-honey glaze over each fillet and let them marinate for 10 minutes.
Bring the vegetable broth to a boil in a medium saucepan. Stir in the pearl couscous, reduce the heat to low, cover, and simmer for 10-12 minutes until tender and the liquid is absorbed.
Bake the salmon in a preheated oven at 200°C (400°F) for 12-15 minutes. The fish should flake easily with a fork and the glaze should be beautifully caramelized.
Fluff the cooked couscous with a fork. Roughly chop the pistachios and fresh mint, then stir them into the couscous along with the juice from the remaining half lemon. Season with salt and pepper.
Divide the vibrant pistachio couscous evenly among four plates. Gently place a glazed salmon fillet on top of each bed of couscous and serve immediately.
