Spicy Gochujang Pork with Creamy Avocado

- Yellow onion1 pc
- Garlic cloves, minced3 pcs
- Fresh ginger, grated1 tbsp
- Gochujang (Korean chili paste)3 tbsp
- Soy sauce2 tbsp
- Sesame oil1 tbsp
- Rice vinegar1 tbsp
- Honey or maple syrup1 tbsp
- Ripe avocados2 pcs
- Lime, juice of1 pc
- Fresh cilantro, chopped0.5 bunch
- Iceberg or Gem lettuce heads2 pcs
- Toasted sesame seeds1 tbsp
- Spring onions, sliced2 pcs

Carefully separate the lettuce leaves to create 'cups', wash and dry them. For the sauce, mash the avocados in a bowl with the lime juice, chopped cilantro, and a pinch of salt until creamy. Set both aside.
Heat a large skillet or wok over medium-high heat with a little vegetable oil. Sauté the finely chopped onion until soft, about 3-4 minutes. Add the minced garlic and grated ginger and cook for another minute until fragrant.
Add the ground pork to the skillet. Break it up with a spoon and cook until browned all over, about 5-7 minutes. Drain off any excess fat if necessary.
In a small bowl, whisk together the gochujang, soy sauce, sesame oil, rice vinegar, and honey. Pour the sauce over the cooked pork and stir everything to combine. Let it simmer for 2-3 minutes until the sauce has thickened and coats the pork nicely.
To serve, spoon the hot spicy pork mixture into the prepared lettuce cups. Top with a dollop of the creamy avocado sauce, a sprinkle of toasted sesame seeds, and sliced spring onions. Enjoy immediately!
