Smoked Mackerel & Edamame Soba Bowls
Week 20 brings you the ultimate lightning-fast dinner that feels like a gourmet treat! By combining quick-cooking soba noodles with ready-to-eat smoked mackerel and a punchy sesame-soy dressing, you get a highly nutritious, umami-packed meal on the table in under 15 minutes.

- Soba noodles300 g
- Smoked mackerel fillets400 g
- Shelled edamame beans (frozen)200 g
- Soy sauce4 tbsp
- Toasted sesame oil2 tbsp
- Rice vinegar2 tbsp
- Spring onions4 pcs
- Chili flakes1 tsp

Bring a large pot of salted water to a rapid boil. This will be used for both the noodles and the edamame beans.
Add the soba noodles to the boiling water and cook for 3 minutes. In the final minute, stir in the frozen edamame beans. Drain everything in a colander and rinse briefly under cold water to stop the cooking process.
While the noodles are boiling, whisk together the soy sauce, toasted sesame oil, rice vinegar, and chili flakes in a large mixing bowl.
Peel the skin off the smoked mackerel fillets and gently tear the fish into bite-sized flakes. Finely slice the spring onions.
Add the drained noodles, edamame, flaked mackerel, and spring onions to the bowl with the dressing. Toss gently until everything is well coated, divide into four bowls, and serve immediately.
