Ingredienser

- Unsalted butter4 tbsp
- White miso paste2 tbsp
- Garlic cloves, minced3 pcs
- Fresh baby spinach150 g
- Grated Parmesan cheese50 g
- Black pepper1 tsp
Sådan gør du
Bring a large pot of salted water to a rolling boil. Cook the fresh gnocchi until they float to the surface (about 2 to 3 minutes). Drain well, but make sure to reserve about half a cup of the starchy pasta water.
While the water is boiling, melt the butter in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Whisk in the white miso paste until the mixture is completely smooth.
Transfer the cooked gnocchi and fresh baby spinach directly into the skillet. Toss everything gently, adding a small splash of the reserved pasta water to emulsify the miso and butter into a silky sauce.
Once the spinach is wilted and the gnocchi are beautifully coated in the sauce, remove the skillet from the heat. Stir in the grated Parmesan cheese and freshly ground black pepper, then plate and serve immediately.
