Budget-Friendly Spicy Lentil & Carrot Loaf
This week, we're transforming humble pantry staples into a surprisingly delicious and hearty dinner! Our Spicy Lentil & Carrot Loaf is packed with flavour and plant-based protein, proving that a super-cheap meal can also be incredibly satisfying and nutritious.

- Olive oil2 tbsp
- Onion, finely chopped1 pc
- Garlic cloves, minced2 pc
- Carrots, grated2 large
- Red lentils, rinsed200 g
- Vegetable broth500 ml
- Rolled oats100 g
- Ground cumin1 tsp
- Smoked paprika1 tsp
- Chili flakes (optional)0.5 tsp
- Egg, lightly beaten1 pc
- Salt1 tsp
- Black pepper0.5 tsp

Preheat your oven to 180°C (350°F). Lightly grease a standard loaf pan.
Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and cook for 5 minutes until soft. Add the minced garlic and grated carrots and cook for another 3-4 minutes.
Stir in the cumin, smoked paprika, and chili flakes. Cook for 1 minute until fragrant.
Add the rinsed lentils and vegetable broth to the saucepan. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes, or until the lentils are soft and have absorbed most of the liquid.
Remove the pan from the heat and let it cool for a few minutes. Stir in the rolled oats, the beaten egg, salt, and pepper. Mix thoroughly until everything is well combined.
Spoon the mixture into the prepared loaf pan, pressing it down firmly and smoothing the top.
Bake for 40-45 minutes, until the loaf is firm to the touch and golden brown on top.
Let the loaf rest in the pan for at least 10 minutes before carefully turning it out, slicing, and serving. It's delicious with a side salad or steamed vegetables.
